Hand-picked into small 10kg crates. Crushed & destemmed Pinot Noir & Pinot Meunier - maceration of 8 hours in stainless steel followed by draining the free run (saignée) juice to settle before fermentation in stainless, and 2nd & 3rd fill French oak. Inoculated with yeast. Fermentation duration: 10-14 days. Full MLF. 5% barrel fermented. 95% Stainless steel.
